Au Mas de Janita is a former whitestone farmhouse, renovated with a mind to keep what made the building — the thick walls, the beams, the terracotta tiles, the light that comes through the small-paned windows. Two rooms only, on the first floor: Chouette, with a double bed and a view over the countryside, and Mésange, which converts to three singles or a double plus a single. An independent cottage, Le Pressoir, rounds out the offering for families.
The table d’hôtes is the reason people come back. At 28 euros — aperitif, starter, main, cheese and dessert, without drinks — it is a full, generous meal made from produce bought at the Cahuzac market. Guests speak of it as a moment in the day, not just a meal. Book the evening before.
The pool is saltwater, ten by five metres, in the garden behind the mas. No chemical treatment, no neighbours, just cypresses in the background and the sound of the water. The village is two minutes on foot — the wine estates, the Château de Salettes, the Gaillac hillsides all around.
