Four rooms above a chef-run restaurant on Place Saint-Michel in Rabastens. Béatrice cooks the terroir with a world twist, and the patio is a well-kept secret.
Le 9 en Cuisine is not really a hotel. It is Béatrice’s restaurant with four rooms upstairs — a former coaching inn that has served food since 1930, bought by her in 2020. The interior mixes wood panelling, house plants and teal armchairs; the patio, out the back, is a surprise — banana trees, Virginia creeper, parasols, a Mediterranean atmosphere you do not expect in Rabastens.
The rooms are on the first floor, no lift. Each has its own wallpaper, its own mood, comfortable bedding. Nothing large, nothing luxurious, but clean, cared-for, and you sleep above one of the best restaurants in town.
Béatrice is self-taught, a Maître Restaurateur, a member of the Académie Nationale de Cuisine. Her menu changes with the seasons and the market — South-West classics reworked with spices she brings back from her travels. Wednesday to Saturday, the restaurant is open to all; on other evenings, she offers a set menu for hotel guests. You book in the morning, and in the evening you walk downstairs to dinner without starting the car.
