Le Manoir de Lisle is a 19th-century stone house with blue shutters and a pediment, set among the vines of the Gaillac country, four kilometres from Gaillac. You arrive down a box-lined drive, and the house reveals itself in a wooded park of more than two hectares, with its dovecote standing as its emblem. Behind it, a ten-by-five-metre outdoor pool faces the rows of vines — loungers, parasols, and nothing but open country around.

Inside, the building keeps its spirit: a grand stone staircase, a high-ceilinged hall, tapestries and an old longcase clock. The eleven rooms, classically styled, mix parquet and terracotta tiles; they are soundproofed and air-conditioned, and a lift serves the floors — the hotel also has step-free access. In the morning, the continental breakfast is served with pastries baked on site, out in the park whenever the weather allows.

For the evenings, there is a whisky bar and a billiard room under the beams, and large halls that host receptions and weddings, up to 275 guests. There is no restaurant on site, though: for dinner you head into the bastide of Lisle-sur-Tarn, with its covered square and arcades, or to Gaillac a few minutes away. Pets are welcome, which is not so common among the hotels around the vineyard.
